A Mexican Feast!
As I state on this website, my specialties are in Italian and American fare. That doesn’t mean I don’t have the occasional desire to delve into other delicious cuisines!
I recently had the opportunity to cook for some very special clients at VSells and Associates of Keller Williams Integrity. This fantastic group of realtors (check them out if looking to buy or sell in Maryland) was having their first in person meeting since the pandemic hit several months ago and asked if I would be available to provide lunch for them. Since they typically get Mexican take out (often Q’doba) I decided to stick with the theme and provide them a spread of Mexican staples I call “Lou’doba!” Taking all the precautions set by the CDC and Governor into account, I was able to provide the group with a great meal.
The meal consisted of 24 hour marinated chicken breasts in adobe sauce and spices, seasoned black beans and pinto beans, freshly made salsa and guacamole, authentic chile con queso, roasted corn with cilantro and lime, brown rice seasoned with cilantro, cumin and chilies and of course tortillas and tortilla chips! The event was a hit and the food delicious.
