Spring is in the air ... fresh options for the new season!
While it’s still only early March, the few nice days we’ve had in the northeast have me thinking about lighter, brighter and in season ingredients for the coming season. Artichokes, asparagus, fiddlehead ferns (pictured) and Vidalia onions are great spring vegetables. While you can get these vegetables at local markets at all times of year (minus the fiddleheads), there is nothing like being able to purchase these fresh when they are just in season.
If you’ve never had a fiddlehead fern do yourself a favor and get some this spring. Cooked simply by roasting in the oven with a little olive oil, possibly topped with some crumbled feta, they are delicious and a true sign that spring is here.
